We took a classic chili recipe and made a few tweaks to suit our families' tastes and dietary preferences.
Our Cozy Chili Recipe
Ingredients:
- 1 pound of stew meat, cut into small pieces
- 5 oz dried dark kidney beans, soaked overnight
- 5 oz dried pinto beans, soaked overnight
- 2 bell peppers, diced
- 1 can of fire-roasted tomatoes
- 1 can of tomato paste (optional, for thickness)
- 1 medium onion, diced
- 3 cloves of garlic, minced
- 2 cups bone broth (we love the extra nutrients! we use our homemade bone broth)
- 1.5 tablespoons of cumin (because we like it extra!)
- 1 tablespoon of chili powder
- Salt and pepper to taste
- 1 bag of frozen cauliflower rice (perfect for sneaking in some veggies for little ones and even husbands!)
- Olive oil for sautéing (use Olive Oli not extra virgin)
Instructions:

3. Add the stew meat to the pot, browning it on all sides.
4. Pour in the bone broth, fire-roasted tomatoes, and tomato paste (if using). Stir in the soaked beans and season with salt and pepper.
5. Bring to a boil, then reduce the heat and let it simmer for about 1.5 to 2 hours, or until the meat and beans are tender. If you're short on time, a pressure cooker can work wonders here!
6. In the last few minutes of cooking, stir in the frozen cauliflower rice until heated through.
