As two busy moms running a tallow skincare business in beautiful northern Colorado, we’re always on the lookout for hearty recipes that are both nourishing and easy to whip up. We took a classic chili recipe and made a few tweaks to suit our families' tastes and dietary preferences.

Our Cozy Chili Recipe

Ingredients:

  •  1 pound of stew meat, cut into small pieces
  •  5 oz dried dark kidney beans, soaked overnight
  •  5 oz dried pinto beans, soaked overnight
  •  2 bell peppers, diced
  •  1 can of fire-roasted tomatoes
  •  1 can of tomato paste (optional, for thickness)
  •  1 medium onion, diced
  •  3 cloves of garlic, minced
  •  2 cups bone broth (we love the extra nutrients! we use our homemade bone broth)
  •  1.5 tablespoons of cumin (because we like it extra!)
  •  1 tablespoon of chili powder
  •  Salt and pepper to taste
  •  1 bag of frozen cauliflower rice (perfect for sneaking in some veggies for little ones and even husbands!)
  •  Olive oil for sautéing (use Olive Oli not extra virgin)


Instructions:
1. In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion and bell peppers, sautéing until softened.
2. Stir in the garlic, cumin, and chili powder, cooking for an additional minute until fragrant.
3. Add the stew meat to the pot, browning it on all sides.
4. Pour in the bone broth, fire-roasted tomatoes, and tomato paste (if using). Stir in the soaked beans and season with salt and pepper.
5. Bring to a boil, then reduce the heat and let it simmer for about 1.5 to 2 hours, or until the meat and beans are tender. If you're short on time, a pressure cooker can work wonders here!
6. In the last few minutes of cooking, stir in the frozen cauliflower rice until heated through.
